Located north of Córdoba and next to the Guadalquivir River, it is surrounded by olive groves steeped in history that dominate the entire Sierra Morena, dispersed throughout a continuous succession of mountains and rugged valleys.

Admired for their beauty and incredible biodiversity, these centuries-old olive groves produce extra virgin olive oil recognizable for its uniqueness and ability to concentrate and transmit the essences of its natural environment.

Already in Roman times, EVOO from this region was sent to Rome under the name "oils of Baetica," and valued as one of the highest quality in the Empire.

Our olive oils come from centuries-old olive trees, to which we apply the traditional methods and cultivation techniques required by these rural settings. We guarantee the production of superior quality olive oil. Our products range from extra virgin olive oil to olive pomace oil, all of them of the highest quality, with our Extra Virgin Olive Oil being the jewel of our mill.

OBTAINED ACCORDING TO THE TRADITIONAL PROCESS

We focus on early harvesting, starting the harvest at the veraison stage to ensure the production of a superior quality oil and achieving unique flavor nuances. This also increases the tree's dormancy period to reduce the heightened alternate bearing.

Just a few hours after harvesting, the olives arrive at the oil mill where, after being sorted, the extraction process begins, transforming them into the highest-quality extra virgin olive oil.

Immediately afterward, the EVOO is stored in the cellar, ensuring the preservation of all its organoleptic qualities and guaranteeing that both its health benefits and its unique flavor nuances remain intact until the consumer enjoys it.
